CHOCOLATE SWISS ROLL WITH SATIN GANACHE RECIPE
INGREDIENTS
-CHOCOLATE BATTER
Eggs yolks 4
Granulated Sugar ¼ cup
Vanilla extract ¼ tsp
Salt 2 pinch
Baking Powder 1 tsp
Instant coffee powder 1 tsp
All purpose flour ¼ cup
Cocoa powder ¼ cup
Egg whites (whipped) 4
Butter (melted) 2 tbsp
-CREAM
Whipping cream 1½ cup
Vanilla extract 2-3 drops
Cocoa powder 1 tbsp plus 2 tsp
Powdered sugar 5 tbsp
- GANACHE
Chocolate chips (semi sweet) 1 cup
Butter (unsalted) 1 tbsp
Heavy Whipping cream ½ cup
STEP BY STEP INSTRUCTIONS
1. Separate yolks and whites.
2. Beat yolks for a minute.
3. Add sugar and beat the mixture until its pale in color.
4. In the mixture add vanilla extract, salt, instant coffee powder, all purpose flour, cocoa powder. Mix well. Set aside.
5. Beat egg whites untill it reaches stiff peaks.
7. Fold in egg whites with chocolate mixture. Add butter, fold in and set aside.
8. Grease baking pan/tray with butter. Place a parchment paper on top. Grease it with butter also.
9. Spread batter in the baking pan/tray. Shimmy the pan on the counter to smooth out the batter. Bake on 325°F for 8-10 minutes.
10. In a chilled bowl add whipping cream, vanilla extract, cocoa powder and powdered sugar. Beat until cream is thick and fluffy.
11. Dust the parchment paper with powdered sugar, invert the cake on top. Roll up the cake with parchment paper. Let it chill for 10-15 minutes.
12. Unroll the cake and fill it with cream.
13. Roll up the cake and let it chill for 10-15 minutes.
14. In one cup of chocolate chips add butter, whipping cream. Microwave for a minute or two. Stir until smooth.
15. Place the cake on a cooling rack. Drizzle ganache over the cake slowly.
16. Decorate with strawberries and blackberries.
