INGREDIENTS
500g (2 cups) potatoes
100g (2 cups) Carrot, grated
1 bunch (50g/0.5 cup) spring onions, chopped
4 tbsp (30g) cornstarch
50g (0.4 cup) flour 00
1 tsp (6g) salt
1 tsp (6g) sweet paprika
1 1/2 tsp (8ml) cooking oil
frying oil
METHOD
Cook the potatoes in a pot of water until soft. Then smash the potatoes with the fork.
In a bowl, combine the potato puree, grated carrot, onion, onion, flour, cooking oil, salt and ground black pepper. Stir well.
Spoon a tablespoon of the mixture and shape into a ball. Repeat the process until you have finished all the mixture.
Heat oil in a pan and fry the potato balls until golden brown.
